2016 was a challenging but ultimately rewarding vintage in Burgundy. Spring frosts and cooler conditions affected yields, but a warm, sunny summer provided ideal ripening weather. Crafted with care, the Grèves is made with whole-bunch fermentation, lasting around two weeks to enhance aromatic complexity and tannin structure. The wine is then aged in Chanson’s 15th-century cellar for 14 to 18 months, using a moderate amount of new oak to preserve the purity of the fruit and express the vineyard’s natural elegance.
