Our release is a 6 Year Old bottled at natural cask strength, and we’’ve filled just 289 bottles.
Rye whiskey was previously the whiskey of choice in the US, with Pennsylvania’s distillers making millions of gallons a year.
During prohibition, bootleggers created poorly made substitutes for Pennsylvania Rye, which was very damaging to its reputation. After prohibition passed it unfortunately never quite recovered, with people turning to Bourbon instead.
The distillery, founded in 2011, creates an ‘old-school’ Pennsylvania style Rye – 80% grain, 20% malt (15% barley, 5% rye malt), no corn, and a sweet mash recipe. They use local farms for their grains, temperature controlled fermenters, doing a five-seven day low and slow ferments to develop a complex flavour.
NOSE
Rye bread and allspice, but then very fruity! Dried fruit; cranberries, apricots, and chocolate covered raisins. The spices return with a hint of mint, and some wood char.TASTE
Silky mouthfeel. Fruity and spicy with sour cherries, and cranberries. Woody spices; clove, a hint of cinnamon, and charred oak. A medium length finish that’s full of chocolate. -

Speri Valpolicella Ripasso DOC
Original price was: $29.99.$19.99Current price is: $19.99.Add to cartThis wine is produced using the RIPASSO technique, which is intentionally more restrictively applied in relation to the standard production method. The wine is obtained by going over again, once only, the premium Valpolicella Classico over the same quantity of Amarone marc. As a result, an authentic local wine is produced which elegantly exhibits a delightfully complex fruity aroma and spicy tones complemented with a good acidity and just the right alcohol content.
The grapes are picked by hand and then immediately destemmed and crushed, prior to maceration at controlled temperatures and undergoing complete alcoholic and malolactic fermentation. In the beginning of March the Valpolicella Classico wine is pumped over the pomace from the Amarone and consequently references.
A deep intense ruby red color, with hints of red fruit, spices and cocoa on the nose. Warming and smooth on the palate, nicely balanced by rounded tannins.
